La industria cárnica es el sector líder de la industria alimentaria española. La creciente demanda de estos productos requiere un control riguroso a lo largo de toda la cadena de producción. Para ello, deben desarrollar sistemas que cumplan con los estándares de calidad e inocuidad.
Siguiendo esta línea, durante el desarrollo del trabajo, se ha procedido al diseño de un sistema de gestión de inocuidad alimentaria basado en la norma ISO 22000:2018 en una empresa ficticia de elaboración de productos cárnicos cocidos procedentes del cerdo.
Se evaluó la situación de la organización mediante un diagnóstico inicial, identificando las no conformidades siguiendo los requisitos auditables de la norma. Seguidamente, se llevó a cabo la elaboración de la documentación necesaria, incluyendo mapa de procesos, análisis de contextos y partes interesadas, alcance, política, objetivos, y se desarrollaron los procedimientos de control de documentos, de evaluación de capacitación y de retiro del producto no inocuo.
Posteriormente, se elaboró un programa de acciones correctivas con el propósito de mejorar la cultura de seguridad alimentaria de la organización.
Por último, se describen las fases de implantación del SGIA propuestas para mejorar el desempeño de la empresa en inocuidad alimentaria y prepararse para el proceso de certificación.

The meat industry is the leading sector of the Spanish food industry. The growing demand for these products requires strict control throughout the entire production chain. To achieve this, systems must be developed that comply with quality and food safety standards.
Following this approach, during the development of this work, a food safety management system has been designed based on the ISO 22000:2018 standard, within the context of a fictional company dedicated to the production of cooked pork meat products.
The organization’s situation was assessed through an initial diagnosis, identifying non-conformities based on the auditable requirements of the standard. Subsequently, the necessary documentation was generated, including the process map, context and stakeholder analysis, scope, policy, objectives, document control procedure, procedure for the evaluation of personnel competence and training, and procedure for the recall and withdrawal of unsafe products.
Additionally, a corrective action program was generated with the purpose of improving and assessing the organization’s food safety culture.
Finally, the proposed implementation phases of the food safety management system are described, aimed at improving the company’s performance in food safety and preparing for the certification process.
